Healthy homemade granola 

It's an all new year, you know what that means. New Years resolutions. As always we're trying to start the year off right by eating healthy. Here's a quick and easy recipe to help your day off to a good and healthy start. Because breakfast is, after all, the most important meal of the day!



  • 3 cups oats
  • 1 cup shredded almonds
  • 1/2 cup walnuts or pecans 
  • 1/3 cup melted coconut oil
  • 1/4 cup honey
  • 2 tbsp brown sugar
  • 1/2 cup dark chocolate chips 
  • 1 tbsp cocoa powder
  • 1 tsp coconut essence
  • 1/2 tsp cinnamon 
  • Pinch of salt

Melt the coconut oil and combine with honey. Add a pinch of salt.
In a big bowl combine all the dry ingredients. Poor the coconut oil mixture over the dry ingredients and mix well. 
Spread the oats out over a big cookie sheet and bake on 350F for about 20-30 minutes. Keep a constant eye on it to make sure the granola doesn't burn. Don't worry if it doesn't come out of the oven crunchy, let it stand for a good 5-10 minutes. That should do the trick! Put the granola away in any airtight container to keep it from going stale. 

The more comfortable you get making this, the more variations you can make. You could substitute the shredded coconut for dried fruit, the chocolate chips for raisins, the coconut essence for vanilla etc. the possibilities are endless. 

I like to poor some granola over Greek yogurt with honey and berries. Or eat it as a snack, whatever floats your boat.
